i don’t think you will ever look at crunchy cookies the same, once you have tried these half baked paleo cookies. they are super quick ’n’ easy to make, they are still soft & chewy on the inside & are topped with a chocolately dream!
the best: they are free from grain & gluten, include no dairy & also no refined sugar. they are filled with good fats, cocoa lifts your mood [which is important in the dark months of the year, you know] & the coconut blossom sugar gives them a caramel kind of taste.
by the way, this vegan chocolate glaze is so amazing – you can use it for everything! as a topping for cakes without animal products, too, to sprinkle it over icecream or to dip fruits into it. it’s great & i just have a tablespoon of it & some cinnamon in my almond milk latte some minutes ago. the perfect autumn drink, i swear.
be sure that you use organic ingredients of high quality. the less products in a recipe, the more you have look that they are natural & free from additives.

half baked paleo cookies with vegan chocolate glaze
grain- & glutenfree, dairyfree, sugarfree, paleo
prep time: 5 mins
baking time: 5 mins
total time: 12 mins
120g roasted almond butter
45g coconut blossom sugar
20g cacao nibs
1 tbsp cocoa powder, unsweetened
1/2 tsp baking soda
1 pinch of vanilla & sea salt
40g cocoa butter
2 tbsp maple syrup
1 heaped tbsp cocoa powder, unsweetened
preheat the oven to 180°c & cover a baking tray with baking paper.
mix coconut blossom sugar, cacao nibs, cocoa powder & baking soda in a bowl using a fork & combine with the remaining cookie dough ingredients until well mixed.
scoop rounded 1 big tablespoon balls of dough onto your baking paper – press down slightly with your finger to flatten.
bake for 5 mins, being careful not to over bake because we want soft & chewy cookies with just a little crunch on the outside. remove from the oven.
melt cocoa butter slightly in a pan & stir with maple syrup & cocoa powder.
sprinkle the cocolate glaze over your cookies & garnish with some cacao nibs. they are ready to eat – enjoy!
